Oven Smoked Brisket

Yesterday I was practically skipping home from the store; I was thrilled at finding a beautiful brisket flat at a great price and couldn’t wait to fire up my smoker. Unfortunately, my electric smoker refused to cooperate with me. While I’m researching and fixing it, I thought it would be a good idea to share the method I’ve used in the past to infuse my beef with the flavor of smoked wood without using a smoker itself.

This set of instructions is a great hack for those of you who don’t own a smoker but still want that delicious juicy brisket that tastes like it’s been smoked over wood outside all day long.

You’ll still use wood smoking chips, but instead of placing them in a smoker, you’ll soak them in water and use them in the oven to obtain the same flavor. I usually use Western BBQ chips, which are sold at Walmart and many other stores at a reasonable price.

Ingredients & Equipment

  • 8 to 10 pound brisket, flat cut

  • 2 baking trays

  • Oven-safe cooling rack

  • Parchment paper

  • Butcher paper

  • Wood smoking chips - I use Western BBQ


Directions

  1. Line both cookie sheets with parchment paper, and place cooling rack on one. Place the brisket, fat side up, on top and season as desired. Cover loosely with butcher paper and place in the refrigerator overnight to allow the flavor to permeate the meat.

  2. Pour the wood chips into a thin layer on top of the other cookie sheet and cover with enough water to soak the chips. Leave the sheet on the countertop and allow the water to soak into the chips overnight.

  3. Preheat the oven to 225°F. Place the wood chip cookie sheet onto the bottom rack of the oven. Place the brisket onto the upper rack and bake for one hour per pound, until internal temperature reaches between 195°F and 205°F. Remove from the oven and allow to rest before slicing.

When using this method, always be sure you’re at home to supervise the oven! Soaking the wood chips overnight is the best way to prevent them from catching on fire, but it’s not foolproof - keep an eye on things!
