Crispy Oven Chicken Wings
Preparing chicken wings can get surprisingly complicated, and there are a variety of methods from grilling to frying - but I’m all about simplicity and that’s why I often use the following method to get crispy, flavorful wings, especially when I’m cooking for a crowd or doing meal prep. It’s a hands-off, mess-free approach that gets great results! All you need to do is choose a marinade or seasoning, let the wings soak up that flavor overnight, then pop them in the oven using my specific instructions.

Ingredients & Equipment
3.5 to 4 pounds fresh chicken wing sections
Cooking fat spray of choice - I use duck fat or tallow
Full size baking tray
Parchment paper
Oven-safe cooling rack
Marinades and Seasonings
Spicy Cajun: 3/4 cup Frank’s Red Hot Sauce, 1 tablespoon smoked paprika, 2 cloves minced garlic, 1 teaspoon salt, 1 teaspoon black pepper, 1 teaspoon mustard powder, 1 teaspoon onion powder, 1 teaspoon thyme, 1 teaspoon cayenne pepper, 1 teaspoon fennel, and 1 teaspoon oregano
Truffle Salt: My favorites are from Truff and Spice & Tea Exchange.
Buttermilk Ranch: 3/4 cup buttermilk or 1/2 cup buttermilk powder, 3 tablespoons Pork King Good ranch seasoning
Salt & Vinegar: 1/2 cup apple cider vinegar, 2 tablespoons hickory smoked salt
Tangy Mustard: 1/2 cup Lusty Monk Mustard, 1 tablespoon rosemary, 2 cloves minced garlic, 2 tablespoons salt, 1 teaspoon onion powder
Yellow Curry: 2 tablespoons cumin, 1 tablespoon cardamom, 1 teaspoon coriander, 1 teaspoon fenugreek, 1 teaspoon turmeric, 1/2 teaspoon ground mustard, 1/2 teaspoon cinnamon, 1/2 teaspoon ginger, 1 teaspoon black pepper, 1 teaspoon mace, 1 teaspoon cayenne pepper, 1 teaspoon fennel
Directions
Choose a seasoning or marinade for your wings. Drain the wings, pat them dry, and allow them to marinate overnight in a plastic bag or container.
Preheat the oven to 400° F. Line a baking sheet with parchment paper and place a cooling rack on top. Spray the cooling rack with your fat of choice.
Place the wings, skin side up, on the cooling rack. Space them so they don’t touch, if possible.
Bake the wings at 400° F for 40 minutes. Increase the temperature to 425° F and bake for an additional 7-12 minutes, checking on the wings at regular intervals to ensure they don’t burn.
Crack the oven door and allow the wings to cool for 10 minutes before removing.
Crispy wings pair well with homemade ranch or Stumpy’s Stupid Simple Sauce. I usually eat mine plain, but there are also several good keto sauces on the market if you include those in your diet.
