Turkey Bacon Ranch Croquettes
Croquettes are a portable, crunchy ball of scrumptiousness with a posh-sounding name but a humble ingredient list. Many combinations are possible, but I think this recipe is my favorite. As many of you know, I enjoy having a variety of textures with my meal, and croquettes fit the bill nicely: they’re crunchy on the outside and juicy on the inside. This recipe is also relatively high in fat, despite using turkey, and is therefore very satiating. Two large croquettes with or without dip are usually enough to keep me full.

Ingredients
1 pound ground turkey
1 large egg
1/2 cup pork rind breadcrumbs, plus 1 cup for breading
12 oz bacon, cooked crispy and crumbled
Ranch seasoning (I use Pork King Good)
Salt and garlic to taste
Directions
Heat the oven to 350° F if baking. Combine all ingredients in large bowl, setting aside the 1 cup of pork rind breadcrumbs in a separate bowl. Mix with your hands until thoroughly combined.
Form the mixture into 6-8 large croquettes - think of it as an oblong meatball. Take a look at the photos below, or feel free to make your own fun shape. Just make sure they’re all the same size so they cook evenly.
Coat each croquette thoroughly in the bowl of pork rinds and place on the baking sheet. Bake at 350° F for 35 minutes, then increase the temperature to 425° F for 10 minutes.
Allow the croquettes to cool for 5 minutes before eating. Try dipping them in homemade ranch or Stumpy’s Stupid Simple Sauce. I’d love to see your creations - tag me on Instagram!
