Easy Beef Ribs

Large bone-in roasts like beef ribs can be intimidating, but this easy recipe will give you the confidence to prepare similar roasts for your family or a larger crowd, and the techniques can be applied to other cuts of meat.

Using apple cider vinegar is a sure way to add flavor to any roast, and also helps break down any particularly tough cuts of meat into tender and juicy bites that will simply melt in your mouth!

The technique I describe below will produce a stunning rack of beef ribs with a crispy outer crust that gives way into a fall-off-the-bone tender meaty middle. Pour enough apple cider vinegar over the salted ribs to moisten all parts of the roast.

Ingredients

  • 1 rack beef ribs, approximately 5 lb.

  • 2-4 C. Apple cider vinegar

  • Salt to taste

Equipment

  • Large (6 qt.) slow cooker

  • Baking sheet with oven-safe drying rack

  • Parchment paper


Instructions

  1. Pour enough apple cider vinegar into the slow cooker to coat the bottom with a thin layer.

  2. Place the beef ribs into the slow cooker, folding in half as necessary. Try to fold, rather than cut, the ribs to fit - they cook better when left as a whole rack.

  3. Sprinkle your desired amount of salt onto the ribs, then add the additional apple cider vinegar. Make sure you splash the ACV on all parts of the rib roast, but it is not necessary to submerge it completely. The goal is to create a moist environment to tenderize the ribs.

  4. Cook on low for 4 hours and 30 minutes.

  5. Preheat the oven to 425°F. Line a baking sheet with parchment paper and place the oven-safe cooling rack on top.

  6. Remove the beef ribs from the slow cooker and place on the cooling rack. Cook at 425°F for 12-15 minutes, removing when fat has fried and the outer layer appears crisp and crunchy. Allow to cool for several minutes before serving.
