Duck Encrusted Chicken Tenders
Everybody loves a good basket of chicken tenders! Modern versions, whether from a restaurant or the freezer section, are usually breaded with processed wheat, vegetable oil, and a slew of fake sugars. I mean, how else could you possibly achieve a crispy crunchy coating around that juicy piece of poultry?
Thanks to Carnivore Snax and just a bit of prep work, I’ve got a scrumptious solution for you! Their duck cracklings make a delicious breading for chicken tenders, and it turns out you don’t actually need vegetable oil to get them to stick (who would have guessed?). Ingredients
1 package chicken breast tenderloins, about 2 pounds
1 package Carnivore Snax duck cracklins
2 large eggs
Salt and garlic powder to taste
Equipment
Food processor or blender
Directions
Pulse the duck cracklings in a food processor or blender until pieces are the size of breadcrumbs. Stir with a spatula and repeat to ensure all pieces are the same size.
Dip each piece of chicken into the beaten eggs, then coat with the duck cracklings and place on baking rack.
Line a baking tray with parchment paper and place an oven-safe cooling rack on top. Elevating the tenders ensures they cook evenly.
Pour the bag of duck cracklings in food processor and pulse until small, even crumbs form. Pour into medium prep bowl and stir in desired seasonings.
Beat 2 eggs in separate prep bowl and set next to the bowl of cracklings.
Pat chicken tenderloin slices dry with paper towel. Dip each tenderloin into egg mixture, then roll in cracklings as shown in the video. Place onto prepared baking sheet. Repeat until all tenders have been coated.
Bake at 350° F for 35 minutes. Raise oven temperature to 400° F and bake for 5-7 additional minutes. Remove from oven and allow to cool before enjoying.
