Breakfast Burrito with Hash Browns
When I was in college, money was tight and I had not yet begun my health journey. I frequented fast food franchises for their convenience and cost savings - but didn’t realize that I was damaging my body with inflammatory seed oils and highly processed “Frankenfoods.” I was always tired and hungry, but attributed these symptoms to my busy study schedule rather than my lack of proper nutrition and movement.
As you can see from this 2011 photo, my eating habits and lack of movement caused me to carry extra weight. What you can’t see are other conditions like depression, lack of energy, binge eating, and aching inflamed joints.
Breakfast burritos were one of my favorite choices, and I’m happy to report that I can now cook the king of all breakfast burritos at home - carnivore style! It’s easy to stay carnivore with simple swaps, like using Egg Life wraps instead of a tortilla. Egg Life wraps are made, as the name suggests, from egg whites, and are therefore high in protein with only one carbohydrate.
This recipe can be adapted to include cheese if you choose, or you can stay dairy-free. It’s loaded with animal protein and is nutritionally dense, unlike the gut bomb you get handed from the drive through window. Don’t believe me? Ingredients
3-5 slices sugarfree bacon - I use Applegate
1 beef sausage - I use Teton
1 cup pork panko crumbs - I use Pork King Good original flavor
15 quail eggs or 5 chicken eggs
1 packet (0.25 ounces = 1/2 tablespoon) unflavored gelatin
3 - 5 tablespoons unsalted butter (or beef tallow if staying dairy-free)
Seasoning of choice - I use Pluck
Hash Brown Directions
Melt 1 tablespoon of butter in non-stick pan over medium heat. Combine pork panko crumbs, 6 quail eggs (or 2 chicken eggs), and gelatin in small bowl. Whisk to combine. Mixture should be sticky and dense as shown below.
Mold the dough into palm-sized hash browns and fry in the butter, flipping after about five minutes. Continue frying until golden brown; set aside and allow to cool while preparing the burrito.
Burrito Directions
Place non-stick pan on burner over medium heat and add 1 tablespoon butter or fat of choice.
Place sausage in melted butter. Whisk remaining eggs together in small bowl, add Pluck seasoning, and pour into pan. Stir continuously until scrambled.
Move sausage and eggs to a plate while you fry the egg white wrap. You may need to add more cooking fat. Fry the wrap until golden brown on each side, then add the toppings back into the pan to warm them up.
Use spatula to wrap burrito and move to plate alongside your hashbrowns. Allow to cool slightly, then enjoy!
