Simple Scotch Eggs
A traditional Scotch egg is a fun handheld snack, usually consisting of a hardboiled egg covered in sausage meat and breadcrumbs, then fried. Nowadays it’s often served at Renaissance festivals or food trucks with spicy mustard.
I’ve tweaked the traditional recipe a bit so those of us following a carnivore lifestyle can enjoy them as well. I use Wagyu ground beef to cover the eggs, then pork panko breadcrumbs for the outer crispy coating. This provides a nutrient dense, low carb meal while retaining the classic pork flavor.
It’s made with only four ingredients that most carnivores already have in abundance - so get cooking and enjoy!
Ingredients
1 pound fatty ground beef
6 eggs, hardboiled and peeled
1 1/2 cups pork panko - I use Pork King Good
2 tablespoons seasoning of choice - I use Pluck
Directions
Preheat oven to 350°F. Line a baking sheet with parchment paper and place an oven-safe cooling rack on top.
Place the ground beef in a medium mixing bowl and add your seasoning. Mix with your hands until thoroughly combined.
Divide the mixture into 6 portions. Use each portion to cover one egg and place on the rack.
Cook the eggs for 30 minutes. While the eggs are cooking, put the pork panko breadcrumbs into a clean mixing bowl.
Once the eggs have cooked 30 minutes, increase the oven temperature to 400°F. Use tongs to coat the parcooked eggs in the pork panko, and place in the oven for an additional 10-12 minutes, until crispy.
I enjoy spicy brown mustard with my eggs, but sour cream, butter, or homemade ranch are great options too!
